A New American Breakfast

Who doesn’t love breakfast? I love it so much I have it for dinner many nights. Talking with my friend Thao (who’s from Vietnam) the other day about American breakfasts I realized that we eat a lot of sugary things in the morning. Most cereals (I’m speaking of my personal favorites, like cinnamon toast crunch, honey bunches of oats, cookie crisp etc) are laced with sugar! Not to mention pre-made things like Eggo waffles, pancakes with syrup, sugary sweet yogurts, donuts (Voodoo if you are a Portlandian), and various breakfast bars. These foods are not providing the real down to the earth nutrition, vitamins, and nutrients we should be filling our bodies with to get a jump-start on the day. Breakfast, the first and most important meal of the day, should give you lasting energy or good fuel for the day.

Here is a recipe my husband created. Sweet Potato Hash Browns!!!

  1. Peel your sweet potatoes or leave skins on (but make sure to wash them).
  2. If you have a food processor use a blade that creates a Julienne cut. (You could also use a veggie peeler, it just takes longer.)
  3. Oil the bottom of a skillet (We used olive oil).
  4. Transfer your sweet potato pieces into a skillet. Stir so all pieces cook evenly (about 2min of stirring).
  5. Season to taste with sea salt, pepper, garlic (powder or fresh), and a dried herb or two of choice.
  6. Cover and let cook for about 5 min.
  7. Stir it up again and serve.

    Excuse Tangary (our cat) on the counter. We always sanitize before we cook:)

Brett’s idea was to serve this with a fried egg and avocado on top. That way you get protein and some healthy fats to keep your blood sugar levels even all morning.
