I want to share with you a special project I have been working on over the past few days. This week I was given the opportunity to make a student health video for Portland State University. The topic was healthy recipes. My cousin, who is a dietician for the University, and I collaborated to create a video on how to make a deliciously healthy yet crunchy and sweet quinoa salad.
Quinoa is an amazing whole grain! It is easy to make in to a salad or side dish, cooks faster than brown rice, and is packed with protein, unlike most other whole grains!!!
My husband and I discovered quinoa about 2 years ago. We always have it on hand in the fridge. I like to mix it with chicken, but you could easily serve it with a veggie as a side dish for a vegetarian option.
